First, make your favorite margarita! Seriously. It's one of the ingredients. Next, gather the ingredients below and spend the next hour sipping a cocktail and making these cookies. They are super easy and you don’t even have to chill the dough before rolling it out.
If you want to make it with the kiddos, just omit the margarita from the recipe (you can still have one, though!).
Makes: About 3 dozen cookies
Prep time: 30 minutes
Cook time: 6-8 minutes
Ingredients:
1 Cup unsalted butter
1 Cup granulated white sugar
1 teaspoon vanilla extract
Zest from one lime and one orange
1 egg
2 teaspoons baking powder
3 cups all purpose flour
Glaze:
2 cups confectioner’s sugar
3 T Margarita
Preheat oven to 350° F.
Use a mixer to cream butter and sugar in until smooth, at least 3 minutes
Add vanilla extract and egg.
In a separate bowl, whisk the baking powder with flour. Add a little at a time to the wet ingredients. The dough will be very stiff.
Divide into workable batches, roll out onto a floured surface to about 1/4 inch and cut.
Bake at 350 for 6-8 minutes. These cookies do not brown, and may look underdone, but they will firm up once they cool. Let cool on the cookie sheet for about 5 minutes, then move to a cooling rack and let them cool completely before glazing.
For the Glaze:
Mix the margarita and confectioners sugar and stir until the sugar dissolves. You can dip the cookies one at a time or drizzle the glaze over them with spoon.
